Ingredients |
2 tablespoon olive oil
4 garlic cloves, finely chopped
2 shallots, peeled and finely chopped
1 x red chili, deseeded and finely chopped
300 g boccoletti pasta
8 plum tomatoes, cut into 8's
scant 1/2 (us) cup (100 ml) white wine
500 g pack mussels in white wine cream sauce
salt and freshly ground black pepper
2 teaspoon (10 g) 1/2 oz fresh basil, torn |

Method |
1. Heat the oil in a heavy based
pan and sauté the garlic, shallots and chili until soft.
2. Cook the pasta as per pack instructions.
3. Stir the tomatoes, wine and mussels into the chili and
shallot mixture and cook for 5 minutes, stirring occasionally.
4. Drain the pasta and add to the mussels, finishing with the
fresh basil.
