ORANGE ROUGHY w. CORIANDER & CHILI SAUCE

Ingredients:

2 lbs. Orange Roughy Fillets
1 x Medium Red Pepper, finely chopped
1 x Medium Onion, finely chopped
2 tbsp. Fresh Coriander, finely chopped
2 tsp. Sugar
2 tsp. Chili-garlic Sauce
4 tbsp. Lemon Juice
6 tbsp. Soya Sauce
2 - 1/2 tbsp. Vegetable Oil

 

Method:

In a small bowl combine chopped red pepper, onion and coriander with sugar, chili-garlic sauce, lemon juice, soya sauce and oil. Beat a little to blend. Reserve.

Pan fry using 1/2 tbsp. of oil or broil the orange roughy.

Upon completion of cooking, transfer to a serving plate and dress with several tablespoons of the reserved sauce.

Garnish with fresh coriander, citrus fruit and bell peppers.
