1/4 cup of salad oil
2 tablespoons of white wine vinegar
1/4 teaspoon of salt
2 cloves of garlic, minced
2 medium avocados
2 tablespoons of salted pistachios, coarsely chopped
Crabmeat or peeled cooked shrimp (or combination of both)
Peel avocado and cut into cubes, sprinkle over lemon juice.
Drain before using (This also stops the avocado going brown).
Combine avocado with remaining ingredients, chill for 15
minutes and serve on a lettuce leaf.
