

Hello,
I'm hoping to make Delia's Christmas Pudding and note that the recipe calls for shredded suet. Does it have to be beef suet or will vegetable suet work? I can't find beef suet in Ireland.

Hello Elaine,
You could use vegetable suet, or you can use grated butter if you prefer. In the same way as Delia prepares quick flaky pastry, it’s easier to grate it if it’s been frozen for 45 minutes first and use a little of the flour to keep the gratings separate.
